I seem to have answered my own question. By turning off the keyboard, going beyond the range of my MacBook, and then turning the keyboard back on while searching for a device in the iPod's Settings - General - Bluetooth window, I was able to pair the keyboard and iPod touch.
I'm still trying to figure out the smoothest path for pairing/unpairing/re-pairing the keyboard with these multiple devices; it's still quite hit and miss and can take a long time, with a lot of trial-and-error poking around, to successfully re-pair with a different device. It's also possible that I'm not the brightest bulb on Broadway.
